I have bought a new domain name for now, NEW SITE NAME REMOVED
Now, should I leave OLD SITE NAME REMOVED up? or should I take it down and replace it with NEW SITE NAME REMOVED? I know it takes time for engines to really link to your site, with OLD SITE NAME REMOVED I am pretty decent with a few natural searches. Or should I mirror the content on the pages? Thanks for all your help!

Hello again,
Congratulations on your new domain name. If the costs of OLD SITE NAME REMOVED hosting etc are not too much of a burden, then leave it up. There is no reason why you can't work on both sites at once.
Don't mirror the pages or content. Begin from scratch. This time start by finding your top competitor. Use google for this.
Have you picked your 3 target keywords?
If not, you should do some keyword research.
If yes, the search on Google for websites with those keywords in their page title. This will give you a go0d list of competitors. Use the 'allintitle' search term. (http://www.independentwebadvice.co.uk/search_techniques.html).
Use:
allintitle:keyword1 keyword2 keyword3
as your search phrase in Google.
Before you program a single page, work out what it is you want your visitors to do or see. Once you know that, your web structure will become a fairly simple task. Then you can start writing your content and only then can you start thinking about design.

PS Have you looked at the Open Source (free) software such as OSCommerce and Zen Cart? A shop is such a standard experience online now and these programs do a pretty good job.
